Nosy Be blends Malagasy cooking with Creole influences from Réunion and the wider Indian Ocean. Here are seven dishes not to miss, all available from Taxi Food's partner restaurants.

1. Romazava

Madagascar's national dish: a broth of meat (zebu, chicken) or fish with brèdes, leafy greens that slightly tingle on the tongue. Served with rice, like almost everything in Madagascar.

2. Ravitoto with coconut

Pounded cassava leaves, slowly simmered, often with pork or zebu, and softened with coconut milk. An everyday, comforting dish.

3. Chicken cari

Cari comes from Réunion: a stew scented with turmeric, garlic, ginger and tomato. With rice and pulses (beans or lentils), it is a full meal.

4. Rougail saucisses

Another Réunion classic: sausages simmered in a tomato, onion and chilli sauce. Go easy if you are not used to chilli.

5. Goat massalé

Massalé, a spice blend of Indian origin, flavours a goat stew. Rich and bold, perfect for the evening.

6. Sambos

7. Coconut fish
